Za’atar, a Middle Eastern spice mix, is a basic mixture of thyme, oregano, and toasted sesame seeds. It can be used in a variety of different ways: from a rub on grilled chicken to a flavoring in olive oil.

Today we are going to be preparing a simple roasted chickpea snack and appetizer. I absolutely love to munch on a handful of these chickpeas. It makes the perfect handheld food and are healthy as well!
What I really love about these roasted chickpeas is how easy they are. Just dump a can of drained chickpeas onto a sheet pan and toss with a little bit of za’atar seasoning. Roast until the chickpeas are nice and toasty then serve in small bowls with a spoon.

These roasted chickpeas are coated with a savory middle eastern spice.
- 1 can chickpeas 15.5 oz
- 1 T za'atar spice mix
Preheat your oven to 450F. Rinse and drain your chickpeas, drying thoroughly with paper towels. Pour onto large sheet pan and toss with za'atar spice mixture. Roast until crispy, about 30-35 minutes. Cool slightly and serve.
