Flaky with a punch of lemon, these Maltese Lemon Christmas Cookies will be gone before morning.
If there’s one thing I love most about Christmas it’s holiday baking. Once a year is it acceptable to bake goodies and treats to your heart’s content without feeling a tad bit guilty.
Today I wanted to share with you this sugar cookie recipe from the small country of Malta. Located between Sicily and Northern Africa, Malta is home to several historical landmarks and is considered the smallest country with the largest population density on earth.
How To Make Maltese Lemon Christmas Cookies
Like any butter-based cookie, the first thing you need to do is soften the butter. Most of the time I forget to do this so I end up placing it in a plastic baggie and massaging it for a bit with my hands. It’s also a makeshift anti-stress ball, just saying.
Once the butter is softened, cream it in your electric mixer with sugar, vanilla, lemon zest and vanilla. Once the mixture is light and fluffy, add in the egg and mix until combined.
Meanwhile in a separate bowl whisk together the dry ingredients.
Add the dry to the wet and stir until combined. Then place the dough into a gallon-size plastic baggie and freeze for about 30 minutes.
As the dough chills, scavenge through your entire kitchen (and a few boxes in your garage) and find your cookie cutters. By the time you find them your dough is perfectly chilled.
Take a quarter of the dough from the bag and place on a generously floured counter or baking mat. I like to use a baking mat since it makes it easier for the dough not to stick.
Roll out the dough to about 1/4-inch thick and cut with your cookie cutters. Sprinkle with fun sprinkles if desired and bake in a preheated oven for about 6 minutes.
Try and let them cool before inhaling. I know, it’s hard to resist!

- 1/2 cup butter softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 lemon zested
- 1 egg
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cream of tartar
- 1/8 tsp salt
With an electric mixer, cream the butter until light and fluffy. Add in the sugar, vanilla, and lemon zest and cream. Add in the egg and mix to combine.
Meanwhile in a large bowl whisk together the flour, baking soda, cream of tartar and salt. Add the dry ingredients to the wet and stir to combine.
Place the dough into a plastic baggie and chill in the freezer for 30 minutes. Preheat your oven to 350F.
Remove dough from freezer and place a quarter of the dough on a floured surface and dust the dough with flour. Roll into a 1/4-inch and cut with cookie cutters. Sprinkle with sprinkles.
Bake until light golden on the edges, about 6-7 minutes. Remove from oven and cool.
