Did you know that kolache (the plural form of kolach) has a huge following in Texas? Yes! In fact, Texans enjoy kolach for breakfast quite regularly– especially in North-Texas which is considered the Texas Czech Belt. There are even entire city-wide celebrations for these treats.
Whether you eat these in Dallas or in Prague, these little pillows filled with fruit are amazing and fun to make.
Today I decided to make a traditional blueberry filling but you can find these pastries filled with various fruits and jams.
To begin, prepare your dough by mixing the yeast, sugar, and milk in a bowl or liquid measuring cup. Your yeast should bubble after a few minutes and smell like bread. And I’m telling you, if that could be turned into a perfume, oh boy, I would totally have a bottle of it.
Next, mix up the rest of your ingredients in the bowl of your stand mixer and get your dough hook ready.
A couple of months ago my dough hook went completely missing. I was crushed. I had no idea where it went. After buying a new dough hook from the kitchen store at the outlet mall and coming home, I placed the hook in a drawer in the kitchen. Guess what was in the drawer?! Yea. I still have no idea how or when it showed up.
Anyways, knead that dough until its elastic and creates a stiff dough. Then pop it in the fridge overnight. You can proof it for an hour and forgo the fridge, but I like the slow rise the fridge provides.
The next day punch down your dough and roll it out nice and smooth. Using a glass, cut the dough into rounds and let rise until doubled. Then indent the middle with your thumb and fill with the blueberry filling. Brush with an egg wash and bake. Enjoy with a steaming cup of coffee.

My Recipe for Czech Republic Kolach Filled with Blueberry
This Czech Republic sweet pastry is filled with a blueberry filling.
- 1 pkg active dry yeast
- 1/4 cup sugar divided
- 1 cup warm milk about 110ºF
- 3 1/2 cups all-purpose flour
- 2 egg yolks
- 1/2 tsp salt
- 2 Tbsp butter softened
- 1/2 cup blueberry pie filling
- 1 Tbsp water
- 1 egg white beaten
In a liquid measuring cup combine the yeast, 1 Tbsp sugar, and milk. Let yeast sit until bubbly, about 10 minutes.
Meanwhile, combine 1 cup of flour, with the remaining sugar, egg yolks, salt, and butter in the bowl of your stand mixer. Using your mixing paddle, add in the yeast mixture and mix until smooth. Add the remaining flour gradually to create a stiff dough.
Replace your mixing paddle with the dough hook and knead until smooth and elastic, about 8 minutes. Place in a greased bowl, turning the dough over to grease the top. Cover with plastic wrap and place in the fridge, allowing to rise overnight.
Punch down dough and let sit 20 minutes. Roll out onto a floured surface to 1/2-inch thickness. Cut out 2-inch circles with a cutter or a drinking glass. Place rounds on a greased baking sheet and let rise until doubled, about 45 minutes to an hour.
Meanwhile, preheat your oven to 350ºF.
Press your finger into the middle of the dough and fill with the blueberry filling. Brush dough with egg white and bake until golden brown, about 15 minutes. Remove from oven and cool.
